ALUGBATI SALAD
ingredients:
1 bundle of Alugbati
3 pcs. tomatoes, sliced
vinegar and salt to taste
fresh basil, chopped (optional)
procedure:
Blanch alugbati in boiling water until leaves are limp.
Remove water and set alugbati on a service plate.
(Soup of blached alugbati can be used as vegetable stock)
Add sliced tomatoes, vinegar as well as salt and fresh basil to taste.
An excellent side dish to fish, fried or steamed.
